Rooibos marinades work only when recipe and heat process are aligned

Rooibos should not be understood as a universal antioxidant additive for pork. A study published on 1 September examined fermented and unfermented rooibos extracts in dry and wet marinades for pork loin, combined with four household cooking methods: oven, pan, sous-vide and microwave. The work focused on early oxidative changes during cooking and on sensory assessment. Its results indicate that the response depends on the combination of rooibos type, marinade format and heat treatment. Under particular conditions, fermented rooibos produced a more favourable sensory profile, notably in a wet microwave marinade and in a dry oven marinade. That dependency is the most useful operational finding. Natural antioxidants do not act independently of formulation and use. Available water, oxygen exposure, heat transfer, surface fat and cooking time can alter both oxidation and the perceived aroma and flavour profile. For product development, the study supports validating every proposal in its actual process rather than transferring a laboratory result directly to a barbecue label or recipe. Rooibos may be an interesting tool for modulating early oxidation and sensory character. The decision, however, should be based on the specific combination of cut, dosage, marinade, packaging and preparation method.
