Outdoor-born pork turns production claims into a retail price premium

Pork from systems in which pigs are born outdoors is gaining weight in British retail. On 1 September, AHDB reported that purchased volume of outdoor-bred products rose 4% year on year. For its analysis, the organisation broadened the definition to include outdoor-bred, outdoor-reared, free-range and organic systems—in other words, systems where pigs are born outside.

The comparison is not merely a price reading. AHDB combined the standard Worldpanel by Numerator definition with a review of retailer sourcing statements and on-pack information. The aim is to identify the market more completely across fresh pork, sausages, bacon, gammon, ham and added-value products.

The retail signal lies in the premium: these products averaged £11.18 per kilogram, compared with £7.43 for total pig meat excluding ready meals. AHDB links the difference to a perception of higher quality, animal welfare or production standards; it does not claim that every product has identical or superior sensory properties.
