The Alberta E. coli case broadens the risk view for pork

A newly published Canadian public-health report reviews a 2018 outbreak of Escherichia coli O157 linked to pork products in Alberta. Epidemiological, laboratory and food-safety evidence identified pork from one meat facility as the main source. The report matters because E. coli O157 is most commonly associated with cattle; its occurrence in swine had received far less scientific attention in Alberta.
