Precision fermentation targets the structural proteins behind meat texture
Meat texture does not depend solely on a product’s external shape. It is also determined by the proteins that build muscle fibres. Researchers at the Tufts University Center for Cellular Agriculture reported progress on 3 September in producing actin and myosin through precision fermentation. These myofibrillar proteins are central to muscle structure and therefore to properties such as bite, consistency and behaviour during heating.
