Slaughter Counts and Carcass Weights Need to Be Read Together

Defra’s statistical update of 10 September adds August 2026 data on cattle, sheep and pig slaughter in the United Kingdom. The information set brings together numbers of animals slaughtered for human consumption, average dressed carcass weights and volumes of meat produced. In addition, the quarterly supplies release combines production, trade and domestic availability for beef and veal, sheep meat, pig meat and poultry.

This kind of statistic does not replace daily price reporting, nor can it explain a market on its own. It does, however, provide a foundation that prices cannot: it measures the raw material that has actually entered slaughter and tracks carcass-weight development. For procurement, cutting-room planning, promotions and inventory management, headcount and weight need to be interpreted together. A change in animal numbers does not necessarily translate into a proportionate change in tonnes available.

Species must also be kept separate. Beef, sheep and pig supply follow different seasonal patterns, weight trends, trade flows and demand structures. The quarterly figures add the external dimension, showing how domestic production, imports and exports together shape supply.
