Less nitrite requires validation across the whole shelf-life system

Reducing nitrite in cooked, ready-to-eat meat products is not solved by merely changing a number in the formulation. A Portuguese study published on 9 September examined cooked turkey ham made with either 150 ppm sodium nitrite or 119 ppm. According to the authors, the latter level corresponds to the new applicable regulatory limit when expressed as sodium nitrite. The work combines storage observation with microbiological challenge testing.
