Cold-store data show why meat purchasing has to be cut-specific

The U.S. cold-storage report released on 25 September makes it necessary to read the meat market by product rather than through one inventory headline. As of 31 August, pork-belly stocks stood at 23.684 million pounds—35% below July and 1% below a year earlier. At the same time, total red-meat inventories were higher year on year. The poultry picture is also uneven. Stocks of chicken, turkey and other poultry totalled 1.145 billion pounds, down 1% from the prior month and 4% from a year earlier. These reserves sit outside the immediate consumer pipeline: they are product held in commercial and public warehouses for 30 days or more. They do not describe a store’s available assortment or deliveries already committed. For processors and trade, the implication is clear: an aggregate stock number cannot replace analysis by cut, species, destination and storage form. A sharply declining belly inventory can behave entirely differently from trimmings, hams, beef or chicken. Monthly movements may also reflect production pace, sales, seasonal storage or logistics. A prudent interpretation connects four layers: slaughter, production, inventories and demand for each application. Buyers sourcing bacon, sliced products, further-processed goods or foodservice need to track the specific raw material and delivery horizon. The report does not itself declare shortage or abundance; it shows where procurement questions need to become more precise.
