Genomic testing turns retail meat hygiene into a process-control task
A study published in the 2 October issue of the *International Journal of Food Microbiology* shows why microbiological control of raw meat should not stop at isolated sample results. The Beijing team examined 1,052 poultry, pork, beef and mutton samples from markets and supermarkets. It investigated *Campylobacter*, *Salmonella* and *Listeria monocytogenes* simultaneously, combining culture work with genomic sequencing and cgMLST.
