Eating quality needs to become a predictable beef specification

Teagasc places verifiable eating quality at the heart of value creation for Irish beef. For the Ashtown Food Research Centre, tenderness and flavour are the decisive measures, but the commercial challenge is not to demonstrate an average level of quality: it is to predict the eating experience of each individual cut reliably. The stated objective is a European eating-quality prediction system linking animal, carcass, processing and sensory data.
