Australia produces more beef with a smaller herd – and reshapes import watchpoints

Australian beef production again demonstrates that meat volume cannot be inferred directly from herd size. According to AHDB’s analysis, Australia is expected to reduce its cattle herd by 0.9% to 30.8 million head in 2026 while increasing beef output by 5% to a record 3 million tonnes carcase weight. The combination is explained by higher slaughter, heavier carcases and record feedlot utilisation. AHDB puts forecast slaughter at 9.6 million head, up 3.4% year on year and the highest level in almost five decades. Average carcase weight is expected to rise 1% to 313 kg per head. The analysis links that productivity to genetic gains, improved pasture conditions in important regions, younger replacement animals and more intensive finishing systems. The commercial effect extends beyond Australia. Australian beef exports reached a record 2.3 million tonnes carcase-weight equivalent in 2025, and AHDB forecasts 2.4 million tonnes for 2026. Market access, however, is becoming more difficult: China’s quota was exhausted in June and, according to the analysis, a 55% tariff applies afterwards. South Korea also saw tariffs imposed after quota volumes were used. For the UK market, the signal needs perspective. Australian shipments to the UK rose 126% in the first seven months of 2026, but from a small base: 12,900 tonnes, of which 91% was frozen product. The decisive issue is not immediate substitution, but the interaction of Australian productivity, trade access and cut valuation. European buyers should monitor product categories, product form and arrival timing rather than relying on a headline about record output alone.
