Institutional meat supply succeeds when portions, documentation and safe serving align

The U.S. Department of Agriculture revised its support sheet on serving meats and meat alternates at lunch and supper in the Child and Adult Care Food Program, CACFP, in October. The document does not itself establish a new legal rule; the guidance explicitly states that. It does, however, translate menu, purchasing, safety and documentation requirements into an operating format for child- and adult-care kitchens. For meat supply, the equivalency logic is particularly useful. One ounce equivalent is, for example, one ounce of cooked boneless meat. The guide also sets out reference quantities for eggs, cheese, yogurt, tofu, pulses and other foods. Not everything that appears to be a protein product counts automatically: some items may require a Child Nutrition label or a manufacturer’s product formulation statement. Bacon, salt pork and certain cheese products are not creditable under this component. The document also links the portion to safe preparation. For children under four, it recommends cutting meat, poultry and other foods into small, thin pieces; round or tube-shaped products such as sausages should be cut into short strips rather than rounds. Bones must be removed before cooking or serving. These details directly affect format selection, cutting work and product specification. The lesson for manufacturers, distributors and kitchens is that institutional-market access depends on meat being usable, not merely available. Cooked weight, composition, documentation, serving size, cut format and preparation must fit together. A strong commercial specification for this channel is therefore more than an ingredient and price sheet: it must make clear how a product meets the portion requirement and can be served safely.
