Butchers need contribution-margin discipline as volumes weaken
The quarterly survey by the Deutscher Fleischer-Verband among 92 member businesses paints a difficult picture for Germany’s butcher trade. Almost 40% of businesses reported lower sales in the first half of 2026, while around 29% reported improvement. In terms of volume, roughly 42% recorded declines. The survey is not statistically representative of the entire sector, but it does provide a current signal from organised businesses.
Profit performance moved somewhat differently from sales. Around one quarter of respondents reported improvement, while about 45% reported deterioration; the negative share was lower than a year earlier. The report links this difference, among other factors, to comparatively low pork prices at the time of the survey. Beef purchase prices, meanwhile, were high. The conclusion is not that inexpensive raw material solves economic pressure, but that a species and product mix can change a company’s result even when volumes decline.
Bureaucracy and staff availability top the list of concerns. Personnel and energy costs are also rising in importance, while customer loss and restrained purchasing are mentioned more frequently than before. Only about 40% described their business situation as satisfactory or very satisfactory, compared with more than 50% in the third quarter of the previous year. For the next twelve months, nearly 65% expect stability or improvement, but around 27% anticipate deterioration.
