Convenience turns cooking expertise into an in-house meat-processing capability

SPAR Vorarlberg has expanded its TANN site in Dornbirn, linking the investment to additional capacity for cutting, sausage production, cold storage and cooking. According to the company, around €12 million was invested; production space increased from 5,300 to more than 6,100 square metres, while a further 1,100 square metres of existing space were renovated.

The most relevant element for the meat sector is the integrated speciality kitchen. It began with 60 square metres and now occupies almost four times that area. TANN produces cooked jarred dishes including beef goulash, bolognese, veal ragout, chilli con carne and soups. The company says output of this range has increased more than fivefold since launch.

This illustrates a meaningful trend: value creation does not arise only from turning meat into cuts or sausages, but also from taking on a defined part of the cooking task. For that strategy to work, cooking know-how must connect with purchasing, recipes, heat treatment, filling, shelf life, packaging planning and clear usage communication. Regional sourcing can reinforce the offer, but it cannot replace a tangible everyday benefit.
