Processing expansion becomes regional value only through a complete product pathway

New USDA funding for ten independent processors in Kansas shows that capacity expansion does not merely mean installing more slaughter capacity. The November 2 announcement bundles investment in cutting, grinding, smoking, vacuum packaging, thermoforming, refrigeration, blast chilling, storage and labelling. The intended effect is therefore greater ability to transform and market product, rather than simply to receive more animals.
