Weekly output rises, but US red-meat supply remains below last year

The latest USDA weekly report on federally inspected production shows that the US red-meat market is not moving uniformly. For the week ending August 29, estimated total output was 985.2 million pounds. Volume was 1.9% above the preceding week but 1.2% below the same period a year earlier. Year-to-date production was 2.5% lower than in 2025. The weekly figure includes 478.8 million pounds of beef, 503.4 million pounds of pork, 1.0 million pounds of veal and 2.0 million pounds of lamb and mutton. It is an estimate of federally inspected production and excludes condemned product. It therefore does not directly measure consumption or retail prices, but it provides a timely and consistent signal of physical market availability. The week-on-week and year-on-year comparisons need to be kept separate. The rise from the preceding week indicates greater short-term slaughter and processing activity; the decline from a year earlier and the lower year-to-date total describe a tighter supply base in the broader perspective. Blending those time horizons can quickly produce misleading market conclusions. For buyers, processors and sales teams, the report is a checkpoint rather than a forecast. It should be read alongside slaughter weights, species mix, inventories, imports and demand by cut. That combination determines whether a volume change reaches availability, margins or prices. This week’s message is straightforward: a temporary rise in output does not remove the reality of lower annual supply.
