The meat world needs more than headlines

A new medium does not need a long founding myth. But it should explain why it exists. Meat Morning Briefing was created because every day I see how much knowledge our sector holds – and how rarely that knowledge comes together in a form that people can actually read, understand and use in the morning. There are countless news items, newsletters, studies, association updates, product launches and social-media posts. Content is not the problem. What is often missing is time, context and sometimes the connection between different professional worlds. Science speaks differently from craftsmanship. Industry differently from consumers. Education differently from the market. International findings too often remain where they originated, even though they could move a business, a classroom or a discussion forward somewhere else. That is precisely where this briefing begins. It is not intended to be a link container or a daily collection of as many headlines as possible. Anyone who comes here should already learn something within the edition itself. Sources are identified directly so that every reader can continue and verify them independently. But the editorial task starts earlier: selecting, reading, comparing, translating and explaining why information matters to the meat world – or why a loud story may carry less weight than its headline suggests. The name Morning Briefing is deliberate. Nobody needs a textbook at five in the morning. But neither do they need three arbitrary sentences designed only to produce another click. That is why there are different reading depths: the quick overview, the main briefing and the detailed deep dive. Readers decide how far they want to go that morning. The substance must be sound at every level. One thing in particular has shaped me over recent years: professional knowledge grows when different experiences are genuinely allowed to work together. In butcher schools, courses, businesses, on professional journeys, at tastings and in conversations with experts from Europe, Argentina, Japan, Ireland, the United States and many other regions, I have seen how different products, markets and traditions can be – and how quickly common ground can nevertheless emerge. One sentence has stayed with me: “Our common language is meat.” That is exactly the point. Meat Morning Briefing is not meant to standardise that common language. Quite the opposite. Differences between regions, cultures, species, craftsmanship, research and economic realities should remain visible. But we can make them understandable. Learning globally and applying locally is not a slogan to me; it is a way of working. A finding from Buenos Aires does not have to be transferred one-to-one to Vienna, Augsburg or Spiez. But it can prompt a better question there. And sometimes that better question is the beginning of real progress. The briefing is therefore not aimed at one group alone. Butchers, meat sommeliers, scientists, teachers, students, product developers, chefs, breeders, traders, barbecue professionals and interested consumers view meat from different angles. These perspectives should have a place alongside one another here – professionally, respectfully and without the usual blinkers. Not every edition will be equally important to every reader. But every edition should contain at least one thought that broadens their view. This also includes an open invitation. Institutions, specialist schools, universities, associations, businesses, event organisers and colleagues from my international network are welcome to contribute subjects, studies, dates and observations. Not everything will be published automatically. Relevance, recency, source quality and professional substance decide. But this medium should be able to listen. Good editorial work is not created in a sealed room. Partnerships will also play a role in the future. A high-quality professional medium needs resources and is allowed to function economically. What matters is how. Partner placements will be visibly labelled. A partnership does not buy an editorial opinion, a positive assessment or a place in a news story. Those who become partners support an environment for professional knowledge and reach people for whom meat is not just another commodity. We owe that clarity to readers and partners alike.
