Poultry analysis starts before the instrument

Preparing a poultry-meat sample can appear to be merely a technical step before analysis. Work presented at the EAAP annual meeting shows that it can decisively shape the analytical result. The study, involving EU National Reference Laboratories, examined how sample processing affects protein and moisture determinations. The reported conclusion is clear: preparation and processing methods can alter determined protein and moisture values and create discrepancies between laboratories. On the basis of this and related work, the European Commission’s Expert Group on Poultry Water Content Control issued recommendations intended to standardise procedures and reduce preparation-related bias. For manufacturers, laboratories and trade, this goes beyond laboratory routine. In poultry products, protein and moisture affect specifications, process verification, supplier comparability and, depending on the product, regulatory assessment. If preparation is not precisely described and controlled, a difference in results may look like a raw-material or formulation deviation even though it arose before the sample reached the instrument. The methodological consequence is straightforward: an analytical specification should cover the full chain—from sampling, homogenisation, particle size and temperature control through method, calibration and calculation. Interlaboratory exercises should document those steps, not only final values. Standardisation does not replace expert judgement, but it makes an isolated result a more dependable basis for quality decisions.
