Buyer visits turn butchery and provenance into export specifications

Buyer visits are not a public-relations activity detached from the product: they turn production attributes into verifiable purchasing criteria. AHDB recently hosted an eleven-member Chinese delegation, including representatives of six importing companies, focused on pigmeat. It was followed by four senior US foodservice representatives who examined beef, lamb and pork supply chains through farm and processor visits. The structure of these missions is significant. Alongside meetings with exporters, they included butchery demonstrations. The discussion can therefore move beyond a generic image of provenance or welfare and address cut suitability, carcase consistency, culinary applications and supply capability. For international buyers, these are the points that determine whether a quality claim can become an operational specification for retail, foodservice or processing. The activity coincides with new trade routes. In the first half of 2026, UK red-meat exports reached £1.1 billion in value and almost 293,000 tonnes in volume. Beef volume shipped to the United States rose 71% year on year; almost 40% of pigmeat exports went to China. The UK-US Economic Prosperity Deal also includes a reciprocal 13,000-tonne beef quota, and the first tariff-free British beef shipment has arrived in the United States. The conclusion for producers and processors is precise: market access does not automatically create value for the whole carcase. It requires the right cuts, consistent specifications, origin documentation and a culinary argument that each destination understands. Butchery demonstrations matter because they connect production, yield and use. Value exports begin when that connection can be proven in front of the buyer.
