Meat events create value when tasting, origin and chain dialogue are connected

INTERBEV’s participation in the Sommet de l’Élevage, running from 6 to 9 October in Cournon-d’Auvergne, places meat in a trade-fair format that goes beyond breed displays or product promotion. The French interprofessional organisation is announcing a joint space with five regional committees and Normabev, as well as an INN’OVIN area for sheep. The programme includes cattle-breed presentations, professional discussions and tasting activities.

The value of the announcement lies in the structure of the dialogue: production, classification, processing and consumer communication are presented as parts of one chain. Contractualisation and interprofessional agreements are among the discussion topics at the stand. This does not replace commercial negotiations or settle margin conflicts by itself, but it makes visible the mechanisms through which a chain can define common reference points.

The inclusion of tastings of meat from draught horses is also notable. At a professional fair, a useful tasting is not merely an image-building exercise: it needs clear information about product, origin, preparation and purpose. The sensory experience can then be linked to knowledge of the chain rather than reduced to an isolated sample.
