Pork quality needs a specification built from interacting variables
A new systematic review and meta-analysis brings together 828 studies on the factors determining pork quality. Its central message challenges overly simple quality communication: breed matters greatly, but it cannot by itself explain eating quality. The authors assign breed genetics the largest share of variation in intramuscular fat, while region has a strong influence on cooking loss, drip loss and colour.
Redder chilled pork can come with texture and purge trade-offs
A newly published study on post-rigor chilled pork examines short gaseous nitric-oxide treatment before seven days of vacuum storage. Under the tested conditions, the treatment improved meat redness without increasing residual nitrite. At the same time, shear force and purge loss were higher than in the control group. The gain in colour therefore came with a measurable technological trade-off.
Poultry colour stability points to post-mortem muscle biology
Colour stability in chicken breast cannot be explained by pH, pigments and oxygen alone. A new paper identifies evidence of ferroptosis in the Pectoralis major muscle of yellow-feathered broilers during the post-mortem period. Ferroptosis is a form of cell damage associated with iron-dependent lipid oxidation. The study observed increased membrane-lipid oxidation alongside changes in antioxidant-system markers and mitochondrial structure.
China access remains a technical carcass-value issue for US beef
The inclusion of beef and pork in a list of goods qualifying for better trade treatment in negotiations between the United States and China is, for now, a signal of opening rather than fully resolved market access. The US Meat Institute stresses that retaliatory tariffs and technical non-tariff barriers remain outstanding. The association expects a technical agricultural working group to address these obstacles later this year.
Pork promotion becomes effective when a cut solves an everyday meal
The UK’s AHDB is launching a new October phase of its British-pork campaign. Its focus is pork mince and the promise of affordable, quick and versatile family meals. The campaign combines television, social media, supermarket activity, recipe content and a creator-led activation that suggests switching from chicken breast to pork mince in everyday dishes.
