Advanced poultry training connects technical knowledge with product decisions

The American Meat Science Association is holding POULTRY 201 from November 3 to 5 in Frisco, Texas. In its 2026 education calendar, the course follows POULTRY 101, held in September, and sits alongside PORK 101 as well as hygiene, certification, and carcass-evaluation programmes. This sequence is a reminder that competence in poultry meat does not end with knowing one species or one processing step.

For processors, retailers, and foodservice businesses, advanced training is especially valuable when it connects transfer points: live-animal reception, slaughter, chilling, fabrication, yield, meat quality, food safety, and product specification. A deviation that looks minor at one point can later affect trim loss, shelf life, display appearance, or consumer experience.

The value of this type of training does not lie in transferring a U.S. programme one-to-one to Europe. Its relevance lies in the systematic approach. Training should turn each technical data point into a practical decision: when to segregate lots, which variation merits investigation, which attribute belongs in the specification, and how a finding is communicated between production, quality, sales, and customer.
